Homemade Lemon Pie Recipe
The easy to prepare lemon pie recipe that follows is a long time
family favorite. I will shamelessly admit that I prepared lemon pies with the box mix before I learned how to cook homemade lemon pie from scratch.
So this recipe is for the homemade cook enthusiast that will not longer
take the easy route and settle for boxed lemon pie mix. Although the
boxed mixes are easy to prepare the taste you get cannot compare to
The simple and easy lemon pie dessert that follows uses
several simple ingredients
that you most likely already have on hand.
Delicious Lemon Pie
- one 9 inch frozen pie shell
- 1/2 cup cold water
- 7 tablespoons cornstarch
- 1-1/2 cup hot water
- 1-1/4 cup fine
- 3 beaten egg yolks
- 1 large fresh lemon rind and juice
- 1 teaspoon butter and whipped cream (if desired)
Cookware & Utensils:
- 1 measuring cup
- 1 small mixing bowl
- 1 medium boiling pot
- 1 double boiler
- 1 stirring spoon
- 1 teaspoon
Heat frozen pie shell according to package instructions. Once browned allow cooked pie shell to cool. Allow 1 teaspoon of butter to come to room temperature. Prepare top portion of double boiler for heating.
- In a small mixing bowl, form paste by mixing together cold water and
cornstarch, set aside.
- In a medium boiling pot, bring hot water and
sugar to boil over medium high heat, then add sugar and cornstarch
paste. Cook until liquid becomes clear.
- Next pour liquid into top portion of pre-prepared double boiler and
allow to cook for 10 minutes. Stir in egg yolks one at a time until
complete and cook for an additional 5 minutes.
- Remove mixture from heat
then add 1/3 cup lemon juice, lemon rind and butter. Mix well, then
pour into cooled baked pie shell.
Refrigerate lemon pie until chilled. If desired serve lemon pie topped with whipped cream.
