Quick and Easy Oxtail Soup

Finally an oxtail soup recipe that taste great and is easy to prepare. Ready yourself!! This is one of those meaty soups that everyone loves. I prepared this soup the other day and it was funny to watch the wife and kid fight over the last serving.  Good thing I taste tested while I cooked the soup.

What I like most about this oxtail recipe is the fact that you can use fresh or frozen ingredients.  My preference is always to use the freshest of ingredients but when fresh food items are out of season I never hesitate to go with a frozen alternative.  

I've found that my local store does not always have fresh oxtails so whenever I see them I buy enough and freeze what I don't use.

Too Easy Oxtail Recipe

Recipe Ingredients:

  • fresh or frozen oxtails
  • small bag of mixed vegetables (fresh or frozen)
  • 1 regular size can tomato sauce
  • 1 regular size can diced tomatoes
  • salt and pepper to taste

Recipe Instructions:

  1. Start off by boiling your oxtails over medium-low heat until they are tender. Spoon away any foam that forms as the oxtails boils.
  2. Once oxtails are tender add the mixed vegetables, tomato sauce and diced tomatoes plus salt and pepper to taste. Reduce heat to a simmer and continue to cook for about 1 hour.
