Pineapple Coleslaw Recipe

This pineapple coleslaw recipe is a nice alternative to the plain everyday coleslaw that most people are used to eating. For this coleslaw recipe, the pineapple adds something extra in both color and sweetness.  This fast and easy side dish, is sure to be in demand at your next barbecue.  

Instead of using the unsweetened crushed pineapple like the recipe calls for, I substituted in crushed pineapple in heavy syrup and omitted the four teaspoons of sugar. Despite the change I still received a lot of compliments about the goodness of the coleslaw.  

The point I really want to make is that depending on the skill level of the cook you can always may minor tweaks to a recipe and be okay.  This dish will definitely work if you are looking for a side dish to serve at your next cookout or barbecue.

This is a reader submitted recipe that I tried with a slight variation to the recipe.  

Pineapple Coleslaw Recipe

Recipe Ingredients:

  • 3 cups shredded cabbage
  • 3/4 cup shredded carrot
  • 1 can (8 ounces) unsweetened crushed pineapple, drained
  • 1/3 cup mayonnaise
  • 4 teaspoons Granulated Sugar
  • 4 teaspoons white vinegar

Recipe Instructions:

Here are the simple preparation instructions for some delicious coleslaw.

  1. In a small bowl, combine the cabbage, carrot and pineapple.
  2. In another small bowl, whisk together the mayonnaise, sugar and vinegar.
  3. Pour the mayonnaise mixture over the cabbage mixture, toss well to coat.

Serve immediately or keep cold in refrigerator until serving time
