Family Reunion Noodle Salad Recipe

Ready to try our quick and easy linguine noodle salad recipe that serves twelve people?  Yes, I thought so.  

This is one of many noodle recipes that you can prepare a day or two ahead of serving time.  Just prepare the recipe as explained below and then store the completed dish in a refrigerator until show time. 

Let the salad sit out on the counter top for about 1 hour to come to room temperature before serving.  

I personally tried this salad recipe out and the dish was received well by my coworkers. 

I love to cook and bring food to the office at least once a week so it didn't take much coaching to get everyone to try the dish. After a few bites people were lining up to get more.

Do you need to bring a side dish to a holiday party or another social event?  If so, this is one of those salads that will hold up well sitting out for a few hours during your office holiday party.

Reunion Noodle Salad Recipe

Recipe Ingredients:

  • 1 pound dried linguine, broken into fourths
  • 1/3 cup soy sauce
  • 1/4 cup water
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon of minced garlic
  • 2 cups small cherry tomatoes, halved
  • 1-1/2 cups julienne-cut carrots
  • 1/2 sliced green onions
  • 1 cup nappa cabbage shredded

Recipe Directions:

1. Cook linguine according to the package directions. Rinse under running warm water and allow to drain completely before transfer it to a very large mixing bowl.

2. In a screw-top jar, combine soy sauce, water, olive oil, and lemon juice, and garlic. Tighten jar with lid and shake ingredients well. Pour liquid mixture over hot linguine and allow to cool before proceeding to step 3.

3. Gently add tomatoes, carrots, green onions and nappa cabbage to linguine. Toss gently. Cover salad and chill in the refrigerator for 2 to 24 hours.

Before serving it is recommended you bring the linguine salad to room temperature.
