Broccoli Mandarin Salad

Here is quick and easy broccoli mandarin salad that will substitute as an excellent side dish or appetizer for your next holiday event.  Unique about this salad recipe, is the fact that the broccoli is marinated in homemade salad dressing for several hours before preparing the salad.  

You'll also find that the flavorful taste of mandarin orange really sets this salad recipe apart from other broccoli salads.

Broccoli Mandarin Salad Recipe

Recipe Ingredients:

Salad Dressing

  • 2 medium eggs
  • 1/2 cup sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon dry mustard
  • 1/4 cup white wine vinegar
  • 1/4 cup water
  • 1/2 cup mayonnaise

Salad

  • 4 cups fresh broccoli florets
  • 1/2 cup raisins
  • 8 slices bacon, cooked & chopped
  • 2 cups sliced fresh mushrooms
  • 1/2 cup slivered toasted almonds
  • 10 ounce can mandarin oranges, drained
  • 1/2 red onion, sliced

Recipe Directions:

1. Prepare your salad dressing first. To do so, in a medium saucepan, combine and whisk together the following ingredients: eggs, sugar, cornstarch, mustard, vinegar and water. Cook and stir, slowly over medium heat until the salad dressing mixture thickens. Remove saucepan from heat then stir in mayonnaise. Allow salad dressing to cool before marinating the broccoli.

2. Second prepare your salad. To do so, marinate broccoli in prepared salad dressing for several hours.

3. After several hours, add in the remaining ingredients consisting of raisins, bacon, mushrooms, almonds, onions, and mandarin orange slices. Toss all ingredients well, serving cool.
