Diabetic Shrimp Scampi Recipe

This is a delicious diabetic shrimp scampi recipe.

Cooking for yourself or someone with diabetics can be somewhat of a painful experience until you know what can and can not be eaten.  But don't be discourages, because you can still create mouthwatering dishes that look and taste great.

Diabetic Shrimp Scampi Recipe

Recipe Ingredients:

  • 1-1/2 teaspoons olive oil
  • 5 cloves, garlic, finely chopped
  • 3/4 pound large shrimp, raw, peeled and deveined (6-8 shrimp)
  • 1 pinch lemon, vest
  • 1 teaspoon fresh lemons, juice
  • 1/8 teaspoon white pepper
  • 2 tablespoons chopped fresh, parsley

Recipe Instructions:

As always, the key to great cooking is to be prepared and to use quality ingredients.

  1. Heat olive oil in a large nonstick skillet over medium-high heat. Add garlic, cook and stir for about 3 minutes.
  2. Add the shrimp and cook for 2 minutes. Next add lemon vest, lemon juice and pepper and continue to cook for an additional 2 minutes, until shrimp are done (pinkish white and firm to touch).
  3. Sprinkle with parsley and serve immediately with a side dish.
