What kind of seasoning should I use for oxtails?

Mike I usually season my oxtails with salt and pepper. This works for me, since I consider these to be two of the most basic spices to use for seasoning meats like chicken, pork and beef.

I was reading everyone's post and salt and pepper didn't sound right to me either. So I will try it your way .

I find that seasoning salt works best for me. I usually wait until the meat gets very tender, about falling off the bone. I then add my seasoning salt to taste.

I like serving my oxtails over rice, with a serving of butter beans and corn bread.

It depends on your tastes. But just salt and pepper "ain't gon' cut it!" Try adding some garlic, allspice, and red seeded pepper as well. You can also buy some "oxtail seasoning" from any international grocery store or check the aisles in your regular market, they may have it. I also add scallions, diced up tomatoes and onions to the mix...
