Liver and Onions are Good Stuff to Eat by: RV
Growing up in mississippi, we never heard the name soul food, it was just good stuff to eat. We never had much, but momma could cook anything. I still cook liver n onion gravy with rice. You can call it soul food, or country food, but to me, its still good stuff to eat.

You can soak in butter milk, but if you are in a hurry, all you have to do is season with salt, pepper and cayenne pepper, dredge in flour.
In a cast iron skillet (you can't cook southern food without a cast iron skillet) bring oil (lard is best) to about 375o place liver in hot grease about 2-3 minutes on each side.
Put liver on paper towel lined plate. Liver cooks fast and if you over cook it will be tough.
After cooking leave enough oil and dripping bits to cover bottom of pan, add onions about a cup and sautee till tender, add 3 tbsp flour mix and cook for 3 minutes, add water or beef stock until you get the consistency you would like. Salt and pepper to taste.
Return liver to gravy and simmer for 5 minutes. Yum. There are no accurate measurement in southern cooking, all sight and taste, so work with it a little.
The rewards are great!

Oh shoot! Wish someone would answer this one. My mom could really cook Liver and onions. All I remember is she would never buy frozen Liver and she always cooked it in a cast iron skillet.

My Daddy is from the South and he would cook liver and onion with white rice. Man-O-Man was it good. I remember all my Dads recipes, but liver and onions I don't know how to cook.
