Well well well, this one struck my mind while I was having chicken crostini in a goan restraunt 2 years ago...I got an idea to take it in a vegetarian manner so I mixed my ideas here and there and now presenting Mediterranean Crostini

INGREDIENTS:

10 slices of hard french bread
1/2 cup chopped olives
1 cup cheese grated
salt to taste
2tbsp butter

FOR MARINATED TOMATOES:
20 thin tomato slices
2tsp chopped basil
1tbsp chopped garlic
2tsp olive oil
salt to taste
2tsp pepper powder
2 green chillies chopped

METHOD:
In a pan heat olive oil add basil, garlic, salt and pepper and chillies to it...saute for two minutes and pour it over tomatoes and marinate them...

Apply butter on french breads now place 2 marinated tomatoes on each bread. Sprinkle olives, cheese, salt and pepper on each piece of french bread. Place bread in microwave on high heat for 1 minute for the cheese to melt. Serve with tomato ketchup.

Crostini is also called Bruchetta by most Americans
