I usually cook my steak outside on the barbecue grill. Cooking steak is not as difficult as you might think. Start with the best cut of steak (about 1-1/2 inch thick) you can afford, trimming away the excess fat. To prepare a steak for grilling I usually beat the thawed steaks...for whatever reason they always seem to turn out better and much more tender when I do this. I usually marinate my steaks with teriyaki sauce or garlic butter sauce for a couple of hours before grilling. However, kosher salt and freshly cracked blackpepper works just as well. If you are using salt and pepper be sure to season both sides of the steak.
Next its time to fire up your grill. Allow your charcoal briquettes to burn until they are ash grey and glowing. Prepare coals for direct heating by spreading them in a single layer. Put your steaks on the grill and cook them for 3 to 5 minutes on both sides (timing depends on how you like your steak, medium or well done).
