Cooking Greens without Meat

I get tired of using smoked turkey, so to change it up I add onions, garlic, a little vinegar, salt, pepper and chicken paste, or cubes.

As it cooks, taste to adjust seasoning. My grandma taught me to always use a little water, but add lots of oil. She used bacon grease of course, but I pour on olive oil instead. Cook just the stems with these ingredients and make a good pot liquor. Collards and mustard are a good combo also.

Looks like you are interested in cooking a healthy bundle of mustard and turnip green? If this is the case you are correct in believing that you can make a flavorful dish of mixed greens without adding a fatty meat such as ham hock or bacon.

In the past I have used onions, minced garlic, vinegar and hot sauce to taste.
