Chess Pie

Chess Pie Recipe

1 cup butter
4 cups granulated white sugar
2 teaspoons vanilla extract
8 large eggs
2 tablespoons white cornmeal
1/3 cup + 1 tablespoon + 1 teaspoon evaporated milk
2 tablespoons white distilled vinegar

2 (9 inch) unbaked pie shells

Preheat oven to 425 degrees.

Mix butter, sugar and vanilla together. Mix in eggs, stir in cornmeal, evaporated milk and vinegar and mix until smooth. Pour mixture into pie shells.

Bake 10 minutes in 450 degree oven. Reduce heat to 300 degrees and bake for 40 min. Let pies cool on rack.

NOTE: In my oven, I bake for a total of 50 - 60 minutes at 300 degrees.
