Crispier pie crust

Prepare unbaked pie shell. Prick generously with a fork and brush with beaten egg white. Place on the lower shelf of the hot oven and bake for 5 minutes at 400 degrees. Add pie filling to baked pie crust and bake for ten minutes, lower temperature to 325 for remainder of cook time.

Stiff Filling

The recipe sound really good and delicious however will the flour make the filling to stiff?

Chess Pie

Here is my favorite recipe for chess pie. The recipe is simple and easy.

1/2 cup butter or margarine
2 cups sugar
1 tablespoon flour
1 tablespoon yellow cornmeal
5 well-beaten eggs
1 cup milk
1 tsp vanilla
2 tablespoons lemon juice

cream butter and sugar, beat in flour and cornmeal, add eggs, milk vanilla & lemon juice, beat well. Pour into pastry shell bake 350 55-60 min
