Oxtail SoupThis oxtail soup recipe is good eating. If you're ready to eat, just head over to your local grocery store and buy some fresh oxtails and then cook up the delicious soup recipe that follows below. What I like most about this oxtail recipe is the fact that you can use fresh or frozen ingredients. My preference is always to use the freshest of ingredients but when fresh food items are out of season I never hesitate to go with a frozen alternative. Oxtail Recipefresh or frozen oxtailssmall bag of mixed vegetables (fresh or frozen) 1 regular size can tomato sauce 1 regular size can diced tomatoes salt and pepper to taste Start off by boiling your oxtails over medium-low heat until they are tender. Spoon away any foam that forms as the oxtails boils. Once oxtails are tender add the mixed vegetables, tomato sauce and diced tomatoes plus salt and pepper to taste. Reduce heat to a simmer and continue to cook for about 1 hour. I am sure you will enjoy this hearty, savory and delicious soup.
