Cabbage and Chicken Soup Recipe

You can use this cabbage and chicken soup recipe to make the best use of your sunday leftovers.  Or you can start the recipe from scratch with fresh chicken and cabbage ingredients, the choice is yours to make.  I've tried this recipe both ways, using leftovers, using fresh ingredients, and the results were nearly the same...I was able to prepare some wholesome and delicious homemade soup.

During a cold winters day, this is one of those dishes I will routinely turn to. Mainly because this is is a hearty meal that I enjoy feeding my family because the will always ask for seconds.  There is nothing more fulfilling than the full and satisfied stomach this dish will bring.  

Any leftover soup can be stored in containers and taken to work for lunch.

This quick and easy recipe for cabbage and chicken soup combines two southern favorites, cabbage and chicken, to create a wholesome and healthy cabbage soup.  The addition of cabbage makes this a variation of a classic chicken soup recipe.

Cabbage And Chicken Soup

Recipe Ingredients:

  • 5 cups water
  • 2 cups chicken broth
  • 2 chicken bouillon cubes
  • 2 medium size tomatoes peeled and chopped
  • 1 cup finely shredded carrots
  • 1/2 cup finely diced celery
  • 1/2 cup diced onion
  • 3 cups finely shredded cabbage
  • 1 cup diced cooked chicken
  • 1 teaspoon salt
  • 1 teaspoon ground pepper
  • 1 teaspoon thyme
  • 1 teaspoon basil
  • 1 bay leaf

Recipe Instructions:

  1. In a large soup pot, combine water, chicken broth, crushed bouillon cubes, tomatoes, carrots, celery, onions, cabbage and chicken, mix thoroughly. Bring mixture to boil. Cover pot, reduce heat and simmer for about 30 minutes.
  2. After 30 minutes of simmering add salt, pepper, thyme, basil and bay leaf. Simmer for an additional 10 minutes and soup is ready to eat. Remove bay leaf before serving.
