Here’s a potato soup recipe that I enjoy so much it makes me lick my bowl clean.  Who knows if you try out this recipe maybe you’ll want to lick your bowl clean to.  During winter months when I want comfort foods I turn to my favorite soups. 

I have always enjoyed eating soups especially during the winter because they are so nourishing and satisfying. 

When it’s cold outside and you need to quickly warm up your body nothing works better than a hot steaming bowl of soup.  

We like and recommend this potato soup for simplistic reasons.

Onion and Potato Soup Recipe

Recipe Ingredients:

You will need the following ingredients and cooking utensils for this recipe.

  • 3 large potatoes, peeled and sliced
  • 1 large onion, thinly sliced
  • 2 tablespoons butter or margarine
  • 1 small 5 ounce can evaporated milk
  • grated cheese
  • salt and pepper to taste

Cooking Utensils:

  • medium soup or stock pot
  • potato masher
  • small sauce pan

Recipe Instructions:

  1. In a large soup pot, bring 4 cups of water to boil. Add potatoes, cover with lid and boil until tender, about 20 minutes. Remove pot from heat and mash potatoes with a potato masher or wooden spoon, set aside.
  2. Just before potatoes are done. Add onions and butter to separate small sauce pan. Cook and stir onions over medium-high heat until clear and soft. Add onions to potato mixture.
  3. Finally add evaporated milk, salt and pepper to taste, the simmer for an additionally 5 minutes.

Homemade potato soup is one of my absolute favorite meals to prepare and enjoy! I love the simplicity of this recipe – all you need are potatoes, vegetables, herbs, and your favorite seasonings. The resulting soup is creamy, comforting, and extremely flavorful.

But more than that I love how it brings people together. Every time I make my potato soup I am always filled with warmth, knowing that it will bring joy and nourishment to those around me. Nothing beats the satisfaction of this home cooked meal!

Serving ideas: Before serving garnish your potato soup with your favorite grated cheese. This soup could also be served with saltine or oyster crackers.
