A quick and easy linguine noodle salad recipe that serves twelve people. Reunion Noodle-Salad RecipeRecipe Ingredients: 1 pound dried linguine, broken into fourths1/3 cup soy sauce 1/4 cup water 2 tablespoons olive oil 2 tablespoons lemon juice 1 tablespoon of minced garlic 2 cups small cherry tomatoes, halved 1-1/2 cups julienne-cut carrots 1/2 sliced green onions 1 cup nappa cabbage shredded Recipe Directions: 1. Cook linguine according to the package directions. Rinse under running warm water and allow to drain completely before transfer it to a very large mixing bowl. 2. In a screw-top jar, combine soy sauce, water, olive oil, and lemon juice, and garlic. Tighten jar with lid and shake ingredients well. Pour liquid mixture over hot linguine and allow to cool before preceeding to step 3. 3. Gently add tomatoes, carrots, green onions and nappa cabbage to linguine. Toss gently. Cover salad and chill in the refrigerator for 2 to 24 hours. Before serving it is recommended you bring the linguine salad to room temperature.
