Healthy Collard Greens Recipe

1 teaspoon vegetable oil
1 medium onion, chopped
1 tablespoon minced garlic
14 ounces can chicken broth
2 smoked turkey wings, cut into 2 inch pieces
2 bunches collard greens, cut into thin strips
1/2 teaspoon black pepper
1 teaspoon red pepper flakes

Heat vegetable oil in a large pot. Add onion and garlic, saute until translucent. Add chicken broth and smoked turkey wings, bring to a boil.

Lower heat and simmer 30 minutes, Add collard greens a little at a time, allowing them to wilt so they fit into pot. Add black pepper and red pepper flakes, Simmer, stirring occasionally 1-1/2 to 2 hours.

Remove meat from bones, discarding skin.
