Xorah's Creamy Honey Butter Corn Bread

This recipe was inspired by my 4 year old daughter who despite her love of corn bread was looking for something more exciting. This is now a family favorite!

Whenever I make this the kids come running and the aroma overtakes the block. Perfect with soup or fried chicken but also amazing with just a good old cup of coffee. This is a mommy friendly easy recipe that I know you will love!!

You will need a 8 or 10 inch baking pan for this. Depending on how think you like your corn bread.

Preheat the oven to 375.

Combine the following ingredients:

2 boxes Jiffy corn bread mix
2/3 cups light cream
2 eggs
1 can creamy style corn
12 ounces sharp cheddar cheese grated
1/3 cup scallions sliced
1/4 cup butter

Grease the baking dish with butter and pour batter in. Bake for approximately 20-25 minutes until a toothpick inserted comes out clean (may also have small crumbles sticking to it which is fine).

Then make honey butter:
1 stick of butter softened to room temp
1/4 cup honey

Mix well until smoothe

Let cool slightly (as not to burn your guests or family) but serve warm after topping with honey butter.
