Why Peanut Oil?

Just curious,I've looked at quite a few recipes for southern fried chicken and they all call for peanut oil.

Why is peanut oil preferable as opposed to vegetable and or canola?

When compared to vegetable oil, peanut oil allows you to fry your chicken at higher temperatures.
