Sweet Potato Jacks or Turnovers

My late grandmother used to make the best sweet potato jacks. It was like little sweet potato turnovers that were either pan fried or baked in the oven - I'm not sure which one. Everything was made from scratch. I crave these bad!!! Please share your recipe if you have one.
