Sweet Potato Cake

I adapted the sweet potato cake recipe below from one I found on the Food Network. It's really a bread, but I bake it as a cake. I took it to work one day and everyone loved it. I still bake this cake at least twice a month for my co-workers.

Ingredients:

1 3/4 cup flour
1 1/2 cup sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
3/4 teaspoon salt
1/4 teaspoon allspice
1/4 teaspoon ground cloves
2 eggs
1 1/2 cups mashed sweet potatoes
1/2 cup vegetable oil
3 tablespoons orange juice
1/2 cup chopped walnuts or pecans (optional)

Directions:

1. In large bowl whisk together the flour, sugar, baking soda, cinnamon, nutmeg, salt, allspice, and cloves.
2. In a small bowl whisk eggs, sweet potatoes, oil and orange juice. Stir into dry ingredients just until moistened. Fold in walnuts or pecans.
3. Transfer mixture to greased bundt pan, bake at 350 Fahrenheit for 60 minutes.

Glaze Topping:

1 cup confectioners sugar
2 tablespoons Honey
2 tablespoons Milk

Mix glaze topping ingredients together in a small bowl, until glue like consistency. Cool cake for about an hour, then glaze.


This sweet potato cake recipe serves about 12- 13 people.
