How do you maintain a constant temperature in the oil in a frying pan?

More precisely, what is a good setting (out of 1 through 10) for an electric burner when frying meat?

The trick to keeping a consistent temp during stove top frying is to use a heavy skillet (like cast iron) and don't overcrowd it - otherwise things get steamed instead of fried.
