Below you will find three (3) quick and easy recipes for chicken -- all of which you can prepare for your family any night of the week.  

Each of the chicken recipes that follows use simple ingredients which you probably already have on hand in your kitchen.

Blackened Chicken Breast
This is definitely one of our most requested chicken recipes. Be careful though, this recipe will produce a lot of smoke in your kitchen. Of the three recipes, blackened chicken breast is my favorite.

Hungry for lunch? Try this recipe for a crisp and crunch chicken breast sandwich. This is by far our visitors most favorite of all three quick and easy chicken recipes.

Chicken Creole
A very Louisiana style creole recipe that use the most common ingredients. This is a up and coming recipe favorite that features that creole flavor we love so much. This rounds out our quick and easy chicken recipes.

Chicken Creole

Recipe Ingredients:

  • Non-stick spray coating
  • 4 medium chicken breast, skinned, boned, halved and cut into 1-inch strips
  • 1 can (14-oz) diced tomatoes
  • 1-1/2 cups chopped green pepper (1 large)
  • 1 cup low sodium chili sauce
  • 1/2 cup chopped celery
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tbsp chopped fresh basil or 1 tsp dried basil, crushed
  • 1 tbsp chopped fresh parsley or 1 tsp dried parsley
  • 1/4 tsp salt
  • 1/4 tsp crushed red pepper
  • cooked rice

Recipe Instructions:

  1. First coat non-stick deep skillet with a light coat of cooking spray. Over medium-high heat cook and stir raw chicken for 5 to 10 minutes or until chicken is no longer pink.
  2. Reduce heat then add diced tomatoes with juice, green peppers, chili sauce, celery, onion, garlic, basil, parsley, salt and red pepper.
  3. Bring chicken creole to a boil, reduce heat and simmer covered for about 10 minutes. Serve over steaming hot rice.

Makes 4 servings / Serving size is 1-1/2 cups.

Fried Chicken Breast Recipe

Recipe Ingredients:

  • Vegetable oil
  • 1 cup all-purpose flour
  • 1 tablespoon paprika
  • 4 teaspoons salt
  • 1/2 teaspoon pepper
  • 2 cups bread crumbs
  • 1/2 cup milk
  • 2 whole eggs
  • 2 boneless chicken breasts, butterflied

Recipe Instructions:

  1. Heat 1 inch of vegetable oil to 370 degree Fahrenheit.
  2. Form flour mixture by combining flour, paprika, salt and pepper in a small bowl and mix throughly. In another bowl, prepare milk mixture by vigorously stir together milk and eggs.
  3. Dip chicken breast first into the flour mixture, then dip breast into the milk mixture and cover generously with bread crumbs on all sides.
  4. Pan fry chicken breast for about 3 to 5 minutes per side turning once while cooking until white juice runs clear.
  5. Drain cooked chicken on paper towels and serve immediately along side you favorite side dish.

This is by far the most favorite of all three quick and easy chicken recipes.

Blackened Chicken Breast Recipe

Recipe Ingredients:

  • 2 to 4 skinless boneless chicken breasts
  • 1 stick butter melted
  • 2 to 4 tablespoons vegetable oil

Blackened Seasoning:

  • 1 tablespoon salt
  • 2 teaspoons paprika
  • 2 teaspoons onion powder
  • 2 teaspoons sugar
  • 2 teaspoon black pepper
  • 1 teaspoon white pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground oregano
To prepare blackened seasoning: Mix all ingredients thoroughly and place in empty shaker. Shake well before using. Leftovers should be stored in cool, dry place.


  • 2 cups water
  • 2 tablespoons lemon juice
  • 2 tablespoons of soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon of Worchester sauce

Recipe Instructions:

Prepare you meat the night before you plan to cook. You can use fresh or frozen chicken as the main ingredient to this chicken breast recipe. If you use frozen allow for ample time to thaw the chicken.

  1. Place your chicken breast between two pieces of wax paper and pound to an even thickness of 1/2 inch. This will enable you to easily cook your chicken to the desired doneness.
  2. Rinse your chicken under running cold water and pat each chicken breast dry with paper towels and set aside.
  3. Place chicken in container and mix well with marinade ingredients. Seal container and refrigerate. For best results its best to marinate you meat over night. Okay that was the hard part, now its time to cook the blackened chicken.
  4. Remove chicken from marinade, pat dry with paper towels, and set aside. Melt 1 stick of butter. Moisten chicken breast with butter and then generously apply blackened seasoning mixture on both sides, set aside.
  5. Add vegetable oil to a heavy bottom or cast iron skillet, and heat on high until skillet is sufficiently hot.
  6. Add chicken breast to the skillet, cook for 2 minutes. Turn after two minutes and cook the other side. The chicken breast is done when its center has reached an internal temperature of 160-165 degrees. Do not overcrowd the skillet because this will cause uneven cooking.
