Old Stand By - One Pot Meal

by Cassandra Baker
(New Brunswick, NJ USA)

My 7 year old granddaughter loves to come and spend time with me, but this particular weekend she kind of caught me shorthanded in the food and money department(if you know what I mean).

So, when it came time to make dinner we just started to see what was in the frig, freezer and the cabinets. I had on hand a medium sized cabbage, a medium onion, 1green pepper, 1 red pepper, fresh garlic, 1 bag success white rice, 1 package of Hillshire farm beef sausage and olive oil.

Started by cutting cabbage, onion, peppers, garlic and sausage into slices or strips, whichever you prefer. Then covering the bottom of frying pan with olive oil and then sautéing onion, peppers and garlic and then adding the cabbage and cooking until cabbage is done,

Then add the sausage, cover and let simmer. Cook rice as directed and serve the cabbage mixture over the rice. My granddaughter is now in love with this recipe. It's a great meal (one pot) quick and easy. The only thing left to do after that is enjoy!!!

One Pot Wonder Meal

Cassandra

I must say I'm very impressed with your creativity in the kitchen. I'm also old school and don't believe in wasting unused food.

I often find myself doing just what you did when preparing meals. I look throughtout the kitchen and find whatever I can, then I mix things together to produce a delicious meal.
