Recipe Request for a Good Old Fashioned Chitterlings Recipe and
Down Home Baked Fish Recipe

I am looking for an old fashioned honest to goodness chitterlings recipe. I want one that contains those good secret ingredients like my mother used to cook. Maybe someone from North Carolina, Mississippi, Alabama, Georgia, Louisiana or South Carolina would be willing to share with me. I have found chitterlings recipes over the internet but the ingredients that they provide are not good enough. Anybody can put salt and pepper in food but that doesn't mean it's right or will taste good.

I also want a good old fashioned recipe for baked fish. One with all the ingredients such as onions, bell peppers, etc.

my version of old fashioned chitterling recipe

par boil with vinegar, rinse after scum arise, cover with fresh water and add fresh garlic minced, chopped celery and onion some red pepper flakes and a entire bottle of jamacian country style hot sauce add that potatoe to take the smell out and simmer for hours until tender.

I do not measure so here we go. I first clean, clean, clean until they are pearly white. I leave nooottthhiinng!!!!! No little fat nothing flat out. After my last soak and clean I soak them in vinegar and prepare my pot. I use 2 celery stalks, 2 onions, one apple, and one white potato. I rinse the chitterlings off and add to my pot with the before-mentioned ingredients. I add enough chicken stock to cover the chitterlings and bring to a slow simmer.

I then add WHITE PEPPER (not black) a can of cream of celery soup and a little salt to taste, remember your using chicken broth and I prefer regular to low sodium. Boiled on low until fork tender. Remove the amount you are interested in eating at that time and add a little paprika and hot sauce and cole slaw on the side and that's it.
