Marinated Carrot Salad

This marinated carrot salad recipe produces the perfect side dish accompaniment for your next summer picnic or backyard barbecues.

For some extreme flavor, let this recipe chill in the refrigerator for 24 hours before serving.

Marinated Carrot Recipe

Recipe Ingredients:

3 lbs fresh carrots, peeled and sliced in 1/2 inch slices
1 can tomato soup
1 cup olive oil
3/4 cup vinegar
1 cup sugar
1 tablespoon Worcestershire sauce
1 tablespoon mustard
1/2 teaspoon black pepper
1/2 teaspoon kosher salt
1 medium green pepper, julienned
1 large onion, quartered and sliced in strips

Recipe Directions:

1. In a heavy bottom pot, boil carrots in salted water until tender. Drain carrots and set aside.

2. In a mixing bowl, combine ingredients consisting of tomato soup, olive oil, vinegar, sugar, Worcestershire sauce, mustard, pepper and salt -- mix ingredients throughly. Pour ingredients into a medium sauce pan, cook and stir over medium low heat until warm.

3. Using a bowl with lid, layer carrots, green peppers, and onion slices. Pour mixture from saucepan over the layered carrots, green peppers and onions. Place lid on the bowl, then place marinated carrots into the refrigerator -- allow to chill for several hours before serving.
