Homemade Lemon Pie RecipeThe easy lemon pie recipe that follows is a long time family favorite. This recipe is for the homemade cook enthusiast that won't settle for the boxed lemon pie mix. In addition, this homemade lemon pie dessert is well suited for a summer get together or Sunday dinner. Delicious Lemon PieThis easy lemon pie dessert uses several simple ingredients that you most likely already have on hand. The ingredients include one 9 inch frozen pie shell, 1/2 cup cold water, 7 tablespoons cornstarch, 1-1/2 cup hot water, 1-1/4 cup fine granulated sugar, 3 beaten egg yolks, 1 large fresh lemon rind and juice, 1 teaspoon butter and whipped cream (if desired). You'll also need the following cookware and cooking utensils to complete this recipe: 1 measuring cup, 1 small mixing bowl, 1 medium boiling pot, 1 double boiler, 1 stirring spoon and 1 teaspoon. Heat frozen pie shell according to package instructions. Once browned allow cooked pie shell to cool. Allow 1 teaspoon of butter to come to room temperature. Prepare top portion of double boiler for heating. In a small mixing bowl, form paste by mixing together cold water and cornstarch, set aside. In a medium boiling pot, bring hot water and sugar to boil over medium high heat, then add sugar and cornstarch paste. Cook until liquid becomes clear. Next pour liquid into top portion of pre-prepared double boiler and allow to cook for 10 minutes. Stir in egg yolks one at a time until complete and cook for an additional 5 minutes. Remove mixture from heat then add 1/3 cup lemon juice, lemon rind and butter. Mix well, then pour into cooled baked pie shell. Refrigerate lemon pie until chilled.
