This is a delicious diabetic shrimp scampi recipe.

Diabetic Friendly Shrimp Scampi
1-1/2 teaspoons - olive oil
5 - cloves, garlic, finely chopped
3/4 pound - large shrimp, raw, peeled and deveined (6-8 shrimp)
1 pinch - lemon, vest
1 teaspoon - fresh lemons, juice
1/8 teaspoon - white pepper
2 tablespoons - chopped fresh, parsley
1. As always, the key to great cooking is to be prepared and to use quality ingredients.
2. Heat olive oil in a large nonstick skillet over medium-high heat. Add garlic, cook and stir for about 3 minutes.
3. Add the shrimp and cook for 2 minutes. Next add lemon vest, lemon juice and pepper and continue to cook for an additional 2 minutes,
until shrimp are done (pinkish white and firm to touch).
4. Sprinkle with parsley and serve immediately with a side dish.
5. Recommend serving with your favorite pasta.
