Preheat a skillet to medium high heat, add vegetable oil to cover bottom of pan.
Mix flour with salt and pepper.
Dredge liver in flour mixture and place in pan.
Saute on one side two minutes. turn and cook for another two minutes. Do not over cook. Cook over medium heat until blood almost cooked out.

Serve with bacon, onions and french fried potatoes.
