Cake of Gold

I stumbled onto this cake recipe one day when I needed to make a dessert with just what I had on hand in the kitchen. It turned out so delicious it didn't even need anything on top- though a dollop of vanilla ice cream makes it even better!

1 box Jiffy Yellow cake mix
1 egg
3/4 cup fresh lemon juice
1 Tablespoon grated lemon peel
4 (canned) pinepple rings

Mix all ingredients except pineapple rings in a bowl. Grease an 8 by 8 pan with butter and dust with flour. Pour well mixed batter into pan and top with the pineapple rings. Bake at 350 for 25 to 30 minutes.
